Set includes one 3 1/2" parer and one 7" Granton edge Santoku Knife. These knives have ice-tempered blades made of high carbon, molybdenum/vanadium steel which makes for maximum sharpness and edge retention when re-sharPened. Traditional hot-drop forging creates a superior steel product with increased elasticity and maximum internal strength. With the unique bolterless edge, knives can be sharpened from tip to heel. The triple rivet handle with rounded shape is ergonomically designed to provide optimum weight, balance and comfort. Plastic over molded handles, made of poly oxy methylene, will retain their shape and not crack or separate from blade.
